But what makes it Champagne?
It is essentially sparkling wine from the Champagne region in northeastern France, made according to strict rules - that's the only kind that can be called Champagne.
The cool climate and chalky soils in that region produce fresh, crisp wines.
To get the best juice for the first stage of production, the grapes are handled very gently.
It's only during the second fermentation in the bottle that the characteristic carbonation develops.
You open a bottle of champagne very cautiously.
